The Best All Natural Vegetarian Minestrone Soup

It's definitely getting colder in Melbourne and Winter is literally around the corner. It is time for an amazing recipe of an old favourite of mine.
Minestrone soup is such a wonderful comfort food. It's warm, delicious full of vegetables AND has pasta!!! Anything containing pasta is a go to for me. This Minestrone has all natural ingredients, no preservatives and is so simple to make. This recipe serves four and is also vegetarian.
Ingredients
4 carrots
4 medium sized potatoes
4 trimmed sticks of celery
200g diced tomatos
200g red kidney beans
200g penne pasta
3 cups water
Italian herb mix
1 tbls basil
1 tbls parsley
Pepper
Method
1. Cut up carrots, potato and celery, then place in large pot on stove.
2. Add 3 cups of water, tomatoes, red kidney beans, basil, parsley, herbs and pepper.
3. Bring to boil and cook for 20 minutes, stirring occasionally.
4. Add 200g penne pasta and stir often for a further 10 minutes.
5. Once the pasta has soften, serve and enjoy.
